Sloppy Joes are such a crowd-pleasing comfort food. Ditch the cholesterol and saturated fat with this vegetarian sloppy Joe recipe!

The sloppy Joe recipe below is one that Andrea at our sister site Vibrant Wellness Journal originally developed for the Hawaii-based company Life Foods. Her recipe calls for their meatless patties. If meat analogues aren’t your thing, you can just double the amount of lentils. Just remember to also double the water!

Vegetarian Sloppy Joe Recipe

Yield: makes 4 burgers

Ingredients

  • 4, 2.75 oz Life Foods Breakfast Patties (see above for substitution, if you like)
  • 1/2 cup brown lentils
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 clove garlic, minced
  • 1 15-ounce can crushed, fire-roasted tomatoes
  • 1/4 cup Life Foods Red or ketchup
  • pinch each sea salt and black pepper
  • 4 each gluten-free or sprouted grain buns (I like Happy Campers brand buns)
  • your favorite sauerkraut (optional, but recommended)
  • spinach
  • homemade mayo, vegan mayo or mustard

Method

  1. Preheat oven or toaster oven to 400F. Line a baking sheet with parchment paper. Add sausages to baking sheet. Place in oven and bake for 15 minutes, until sausages are crispy and very browned. Remove from oven and set aside.
  2. Add lentils to saucepan with 2 cups filtered water. Bring to a boil. Cover, lower heat and cook for 15-20 minutes until lentils are totally soft and just starting to break apart. Drain and set aside.
  3. In a skillet, warm oil over medium heat. Add the onion, pepper and garlic and cook until onion is just starting to brown. Stir in half the can of tomatoes, Red, salt and pepper. Stir together to combine, then crumble in sausages. Add lentils and stir to combine. Mixture will be thick and chunky; for a sloppier sauce, add the full can of tomatoes. Cook for five minutes for mixture to thicken a bit more. Remove mixture from heat and allow to cool for a few minutes.
  4. Toast buns according to package directions. Add White to bottom bun, top with a few spinach leaves, and divide Sloppy Joe mixture onto buns. Top with Aloha Kraut and more spinach. Enjoy immediately, or keep leftover Sloppy Joe mixture in an airtight container for up to a week.
