In the meantime, I thought I’d share a yummy, sample vegan Thanksgiving menu! I love cooking for a crowd, but unfortunately our house isn’t big enough to host the 16-18 people who descend on Atlanta for Thanksgiving each year, and we end up eating out for Thanksgiving. Since I don’t get to cook on the big day, ogling and collecting vegan Thanksgiving recipes is how I vicariously have the home-cooked Thanksgiving feast of my dreams. If I were able to host Thanksgiving, here’s what I’d be serving up: Appetizers and Sides Ginger vanilla pear sauce – This cooks up in the crock pot and is such a perfect Thanksgiving side! Bonus: it makes the house smell amazing. Fluffy Mashed Potatoes with Savory Mushroom Gravy – The PPK does it just right! Warm Cabbage Apple Slaw – Instead of a salad, this comfy, warm slaw is a healthy side dish for all of that rich holiday food! Savory Stuffed Mushrooms – During the couple of years that we did get to cook for Dave’s family, these mushrooms were a total hit. Main Courses All three of these might be overkill, depending on how big a crowd you’re expecting, but I’m having a hard time choosing just one! Tanya’s Roast and Roots Extraordinaire – This is a seitan roast surrounded by root veggies and served up with yummy gravy. Nutty Curry-Stuffed Squash – For the meat-eating crowd, fake meat doesn’t always go over, but who can say no to individual squash stuffed with curried goodness? Butternut Squash Lasagne – This isn’t quite as traditional, but lasagne is such a crowd-pleaser, and winter squash is pretty Thanksgiving-y, right? Dessert Pumpkin Spice Rice Pudding – Pumpkin is such a perfect fall flavor, and Manifest Vegan’s rice pudding is just perfect. Pie schmie, I say! Cherry Pie – OK, I know that I just said pie, schmie, but come on. Everyone loves pie! Since pumpkin’s represented in the pudding, I thought a cherry pie would be a nice way to wrap things up! Maybe a traditional pumpkin pie or perhaps a pistachio baklava (we have pecan and walnut allergies among the guests.) Festive Chickpea Tart, Pureed Roasted Sweet Potatoes, Rosemary Gravy, and Pumpkin Pie Custards are part of our menu!
