Here’s another one of my favorite vegan cookie recipes. Well, actually it’s a blondie but close enough, eh? Click here for the recipe. These vegan blondies have a lovely, spiced sweet potato flavor. They’re slightly crunchy on the outside and gooey on the inside. I recommend using coconut milk for the nondairy milk – it goes perfect with the sweet potatoes!
