I am not a fan of typical things like deviled eggs or sausage rolls, and want to bring something vegetarian, healthy (enough) and delicious. While struggling today a bit on what to make for a Christmas party tomorrow night, I had a small light bulb go on in my head. I really wanted to make stuffed peppers, but they are too big for something like a potluck Christmas dinner, so I made them bitesized. How to make them bitesized The key is to cut the peppers into sections so they form little cups. First cut the stem out by cutting around it and pulling it out. Then follow the gills on the inside of pepper with the knife. It will make somewhere between 3 and 5 little cups. Rather than roasting the stuffing inside the peppers, make it separately, and roast the pepper cups just enough to make them sweet, but not enough to make the soggy. These can then be loaded with the stuffing. For presentation, I put them on cupcake papers with a bit of arugula. The papers make them easier to pick up.
