5 Spring Cocktails Because It's Tiki Time!Spring is finally here. Temps warming. Peas sprouting. Everyone sneezing from all that damn pollen. Boo.

But despite springtime allergies, it’s time to sit on a patio and drink some fresh, fruity, springtime cocktails. I pulled out one of my favorite cocktail books — Tiki Drinks by Adam Rocke — to find 5 Tiki-inspired boozy concoctions to share. Here’s how Adam starts his book:

With every sip of a Tiki drink, you should expect to be whisked away to a lush, tropical island surrounded by warm, turquoise waters. Gentle trade winds should continuously fill your nostrils with the delicate scents of palm oil and coconut. Scantily clad insignificant others with perfect bodies should attend to your every need as you lie in an oversized hammock, suspended between two towering palms trees.

I want to go there.

5 Spring Cocktails Because It's Tiki Time!Atlantic Breeze

  • 3/4 oz. light rum
  • 3/4 oz. apricot brandy
  • 3/4 oz. Galliano
  • 4 oz. pineapple juice
  • 1 oz. lemon juice
  • Maraschino cherry
  • Orange slice
  • 1 tsp. grenadine

Fill a cocktail shaker with ice, add the first 5 ingredients, and shake well. Strain into an ice-filled collins glass and garnish with the maraschino cherry and orange slice. Float the grenadine.

Big Bamboo Love Song

  • 2 oz. dark rum
  • 1 oz. light rum
  • 1/2 oz. triple sec
  • 1 oz. orange juice
  • 1 oz. pineapple juice
  • 1 oz. lime juice
  • 3/4 oz. fruit syrup

Fill a cocktail shaker with ice, add all ingredients, and shake well. Pour into a collins glass.

Coconut Kiss

  • 2 oz. Malibu rum
  • 3 oz. pineapple juice
  • 3-4 oz. ice
  • 1/2 oz. Kahlua
  • Maraschino cherry

Blend the first 3 ingredients until smooth. Pour into a chilled collins glass, float the Kahlua, and garnish with the maraschino cherry.

Island Coffee

  • 1 oz. dark rum
  • 1 oz. Kahlua
  • Iced coffee
  • 1/2 oz. cream, whipped
  • 1 tsp. coffee liqueur

Fill a goblet, collins, or hurricane glass with ice, add the rum and Kahlua, and fill with iced coffee. Stir, top with whipped cream, and drizzle the coffee liqueur.

Tequila Sunrise

  • 1-1/2 oz. tequila
  • 1/2 tsp. lime juice
  • Orange juice
  • 1/2 oz. grenadine

Fill a collins glass with ice, add tequila and lime juice, fill with orange juice, and stir. Insert a swizzle stick into the glass and pour the grenadine down the stick, enabling it to reach the bottom and “rise.”
